Preheat oven to 350 degrees F (175 degrees C). (5 minutes)

In a large bowl, combine the sausage, water chestnuts, green onion, 1/2 cup of soy sauce, eggs, garlic powder, and breadcrumbs. Mix until well combined.

Roll the mixture into 1 to 1 1/2 inch balls and place on a broiler pan.

Bake in the preheated oven for 1 hour. Once cooked, transfer the meatballs to a slow cooker.

While the meatballs are baking, prepare the sweet and sour sauce. In a large saucepan, whisk together the sugar and cornstarch.

Pour in the vinegar, pineapple juice, ketchup, and soy sauce (to taste).

Bring the sauce to a boil over medium-high heat, then reduce heat to low, and simmer until the sauce has thickened. (Approximately 15 minutes)

Pour the sweet and sour sauce over the meatballs in the slow cooker. Keep warm until serving.

For a spicier kick, add a pinch of red pepper flakes to the sweet and sour sauce.
If you don't have pineapple juice on hand, you can substitute with orange juice.
These meatballs can be prepared ahead of time and stored in the refrigerator for up to 24 hours before baking.
