Once boiling, reduce heat to medium-low, cover, and simmer until the potatoes are tender, about 20 minutes.

While the vegetables are simmering, cook the bacon in a large skillet over medium-high heat until crispy and evenly browned, about 8-10 minutes. Remove the bacon with a slotted spoon, reserving about 2 tablespoons of bacon fat in the skillet. Set the crispy bacon aside.

Whisk the flour into the reserved bacon fat in the skillet. Cook, stirring constantly, until the flour forms a smooth paste (roux), about 2-3 minutes. Be careful not to burn the flour.

Slowly whisk the bacon-flour mixture (roux) into the simmering potato and green bean mixture in the pot. Stir well to ensure no lumps form. Bring the soup back to a gentle boil and cook until slightly thickened, about 5-10 minutes, stirring occasionally.

Stir in the apple cider vinegar and sugar. Taste and adjust the vinegar and sugar to your preference. Crumble the cooked bacon over the soup before serving.

For a vegetarian option, omit the bacon and use 2 tablespoons of olive oil or butter to create the roux. You can also add a pinch of smoked paprika to mimic the smoky flavor of bacon.
Feel free to add other vegetables to this soup, such as diced carrots, celery, or onions, for added flavor and nutrition.
The soup will thicken as it cools. Add more water or broth to thin it out to your desired consistency when reheating.
Adjust the amount of vinegar and sugar to suit your taste preferences. Some may prefer a more tart or sweet soup.
Garnish with fresh parsley or dill for added freshness and flavor.
