Preheat oven to 325°F (165°C). (5 minutes)

Lightly grease a 2-quart casserole dish with butter or cooking spray. (2 minutes)

In a large bowl, combine the grated sweet potato, sugar, corn syrup, milk, melted butter, beaten eggs, nutmeg, cinnamon, salt, coconut, pecans, and raisins. Mix until well combined. (10 minutes)

Pour the mixture into the prepared casserole dish, spreading evenly. (2 minutes)

Bake in the preheated oven for approximately 90 minutes, or until the top is golden brown and the pudding is set. A knife inserted into the center should come out relatively clean. (90 minutes)

Let the pudding cool slightly before serving. (15 minutes)

For a richer flavor, use brown butter instead of melted butter.
Feel free to adjust the amount of spices to your liking.
If you don't have pecans, walnuts or other nuts can be substituted.
For a smoother pudding, use a food processor to finely grate the sweet potatoes.
The pudding can be made ahead of time and reheated before serving.
