Finish and Chill: Stir in the fresh lemon juice and salt. Remove from heat and let the soup cool completely. For the best flavor, chill in the refrigerator for several hours or overnight before serving. (2+ hours)

For a richer flavor, consider adding a small piece of orange peel while simmering.
Adjust the amount of sugar to your preference, depending on the sweetness of the prunes and raisins.
A pinch of cardamom can add a lovely warmth to the spice profile.
This soup thickens as it cools, so don't be alarmed if it seems a bit thin while simmering.
