Step

Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a sheet pan with cooking spray. (5 minutes)

Cut a slit through the middle of each salmon fillet, about 2/3 the length of the fillet. Set aside. (5 minutes)

In a bowl, gently mix the crab, shrimp, mushrooms, mayonnaise, Parmesan cheese, lemon juice, green onion, and bread crumbs until just combined. Be careful not to overmix. (10 minutes)

Shape 2/3 of the stuffing mixture into 2 large mounds on the prepared sheet pan. Spread open the fillets and place one over each mound. Fill in the top of the slits with the remaining stuffing. Season each fillet generously with seafood seasoning. (10 minutes)

Bake in the preheated oven until the salmon flakes easily with a fork and the stuffing is heated through, about 30 minutes. (30 minutes)

For an extra touch of elegance, garnish the baked salmon with fresh parsley or dill before serving.
Feel free to substitute the crab and shrimp with other seafood options like scallops or lobster.
Adjust the amount of seafood seasoning to your preference. A pinch of red pepper flakes can add a subtle kick.
