In a small saucepan, combine the brown rice and water. Bring to a simmer over medium-high heat (2 minutes), then reduce the heat to medium-low, cover, and simmer until the rice is tender (approximately 40 minutes).

While the rice cooks, preheat a skillet over medium-high heat (1 minute). Add the turkey sausage and cook until well browned on the outside and no longer pink inside (5-7 minutes). Remove the cooked sausage from the skillet.

To the same skillet, add the minced garlic and diced red onion. Cook until the onion softens and becomes translucent (3-5 minutes). Add the sliced green bell pepper and cook for an additional 2 minutes.

Pour in half of the vegetable stock (about 0.375 cup), along with the grape tomatoes and diced pimento. Season generously with crushed red pepper flakes, Cajun seasoning, and black pepper to your liking. Cook until the liquid has almost completely evaporated (5-7 minutes).

Return the cooked sausage to the skillet. Add the remaining vegetable broth (about 0.375 cup) and simmer until everything is heated through (3-5 minutes).

Serve the sausage and pepper mixture over the cooked brown rice. Enjoy!

For a richer flavor, consider using Italian sausage instead of turkey sausage.
Feel free to adjust the amount of red pepper flakes and Cajun seasoning to control the level of spice.
If you prefer a softer pepper, cook it longer in Step 3.
Adding a splash of white wine vinegar in the last 2 minutes can brighten the dish.
Fresh herbs like parsley or basil can be added at the end for freshness.
