In a large saucepan, combine sugar, cloves, allspice, cinnamon, and salt. (2 minutes)

Remove from heat and allow to cool completely before serving. The flavors will meld and deepen as it cools.

For a deeper flavor, try using brown sugar instead of white sugar.
If you can't find quinces, firm apples like Granny Smith can be used as a substitute, though the flavor will be slightly different.
This chutney can be made ahead of time and stored in an airtight container in the refrigerator for up to 2 weeks. The flavors will actually improve over time!
Serve at room temperature for the best flavor.
