Follow The Directions
01
Step
10 mins
In a tagine or Dutch oven, heat olive oil over medium heat. Add minced onions and garlic and cook, stirring occasionally, until softened and translucent, about 5-10 minutes.
02
Step
1 mins
Stir in turmeric, cumin, cinnamon, cayenne pepper, black pepper, and agave nectar. Cook for 1 minute, stirring constantly, until fragrant and the onions are evenly coated.
03
Step
12 mins
Add just enough water (about 2 tablespoons) to cover the bottom of the tagine and prevent sticking. Add carrot slices and salt. Reduce heat to medium-low, cover, and cook for 12 minutes, or until carrots are slightly tender.
04
Step
7 mins
Gently stir in the drained and rinsed chickpeas, adding more water if needed to maintain a thick sauce that coats the ingredients. Cover and cook for another 7 minutes, allowing the flavors to meld together beautifully.
For an even richer flavor, toast the dry spices (turmeric, cumin, cinnamon, cayenne, and black pepper) in a dry pan for a minute or two before adding them to the tagine.
Adjust the amount of cayenne pepper to suit your spice preference. Start with 1/4 teaspoon for a milder flavor.
Serve this tagine over couscous, quinoa, or with warm flatbread for soaking up the delicious sauce.
Tagine can be stored in the refrigerator for up to 3 days.

I've made this tagine several times, and it's always a hit. I especially love the addition of agave nectar, it adds a touch of sweetness that complements the spices perfectly.

I added a can of diced tomatoes to this recipe and it was delicious! It added a bit of acidity that balanced out the sweetness of the carrots.
