Follow The Directions

Preheat oven to 350 degrees F (175 degrees C). (5 minutes)

In a large bowl, combine the shredded chicken, diced red bell pepper, red onion, sour cream, jalapeño-flavored cream cheese, taco seasoning, and salt. Mix well to ensure all ingredients are evenly distributed. (5 minutes)

In a separate bowl, combine the rinsed and drained black beans, hot water, and ground cumin. Using a fork, roughly mash the black beans until the mixture is evenly combined and slightly creamy. (3 minutes)

In a 9x9-inch baking dish, layer 3 flour tortillas on the bottom, slightly overlapping if necessary to cover the surface. (2 minutes)

Spread half of the salsa evenly over the tortillas, followed by half of the black bean mixture, and then half of the chicken mixture. (5 minutes)

Repeat the layering process with the remaining tortillas, salsa, black bean mixture, and chicken mixture, ending with the chicken mixture on top. (5 minutes)

Sprinkle the shredded mozzarella cheese evenly over the top of the casserole. (1 minute)

Bake in the preheated oven for 30 to 35 minutes, or until the top is golden brown and the cheese is bubbly and melted. (35 minutes)

Remove from oven and let stand for 5 minutes before serving. This allows the casserole to set slightly and makes it easier to cut. (5 minutes)

For an extra layer of flavor, consider adding a can of diced tomatoes (drained) to the chicken mixture.
Feel free to adjust the amount of salsa and taco seasoning to your preferred level of spiciness.
This casserole is also delicious with Monterey Jack, cheddar or a Mexican blend cheese in place of the mozzarella.
Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave or oven.
