For a vegetarian version, omit the bacon and use 2 tablespoons of olive oil to sauté the onion and garlic. You can also add a teaspoon of smoked paprika to enhance the smoky flavor.
Adjust the amount of cayenne pepper to your liking, depending on your preferred level of spiciness. A pinch of red pepper flakes can also be added for extra heat.
For a richer flavor, consider using homemade chicken broth. Alternatively, you can add a Parmesan cheese rind while simmering the soup.
