Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). Lightly coat a baking sheet with cooking spray. (5 minutes)

02

Step

In a large bowl, cream together the granulated sugar and softened butter with an electric mixer on medium speed until light and fluffy. (5 minutes)

03

Step

Add the lemon zest, lemon juice, egg, and vanilla extract; beat on low speed until just combined, scraping down the sides of the bowl as needed to ensure even incorporation. (3 minutes)

04

Step

In a separate bowl, whisk together 1 ½ cups of the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Beat in the remaining 2 tablespoons of flour. The dough will be soft. (5 minutes)

05

Step

Place ½ cup powdered sugar in a small bowl. Drop teaspoonfuls of dough into the powdered sugar and gently roll until coated. Place the coated cookies on the prepared baking sheet, leaving about 1 to 2 inches between each cookie. (10 minutes)

06

Step

Bake in the preheated oven until the edges are lightly golden brown, 9 to 11 minutes. (10 minutes)

07

Step

Remove from the oven and let the cookies cool on the baking sheet for 3 minutes before transferring them to a wire rack to cool completely. (3 minutes)

08

Step

Once cool, lightly dust the cookies with the remaining 2 tablespoons of powdered sugar. (2 minutes)

For an extra burst of lemon flavor, add a teaspoon of lemon extract along with the vanilla.
Use a microplane to zest the lemon to avoid getting the bitter white pith.
Chilling the dough for 30 minutes before rolling can help prevent the cookies from spreading too much during baking.
Store the cooled cookies in an airtight container at room temperature for up to 3 days.
