For a smoother sofrito, process for a longer time, but be careful not to turn it into a puree. If you can't find recao, you can substitute it with more cilantro, although the flavor will be slightly different. Adjust the amount of salt and pepper to your liking. Remember, you can always add more, but you can't take it away! Consider adding a splash of vinegar or lime juice for an extra zing.
