In a large skillet over medium-high heat, brown the ground beef until crumbly, approximately 5-7 minutes. Drain off any excess grease.

Transfer the browned beef to a slow cooker. Add the chicken broth, tomato sauce, fire-roasted diced tomatoes, pressed garlic, diced green and red bell peppers, diced onion, chicken bouillon, dried oregano, salt, and pepper. Stir well to combine.

Stir in the instant white rice and continue cooking for an additional 20-25 minutes, or until the rice is tender.

For a richer flavor, consider using Italian sausage in place of ground beef.
Adjust the amount of salt and pepper to your preference. Taste and season accordingly.
If you prefer a thicker soup, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) during the last 30 minutes of cooking.
Feel free to add other vegetables such as zucchini, corn, or carrots for extra nutrients and flavor.
