Step

Soak the beans: Place pinto beans into a large container and cover with several inches of cool water. Let soak for at least 8 hours, or overnight. (8+ hours)

Rinse and prep: Rinse and drain the soaked beans.

Combine initial ingredients: Place the drained beans in a slow cooker and cover with just enough water to submerge them.

Sauté aromatics: Cook bacon in a large skillet over medium-high heat until almost browned and crispy (5-7 minutes). Add tomatoes, onions, bell pepper, jalapenos, cilantro, and garlic. Sauté in bacon drippings for 2 minutes, then slowly pour in beer. Add salt, pepper, chili powder, and cumin. Bring to a boil, then remove from heat (2 minutes).

Combine: Add the skillet mixture to the beans and water in the slow cooker.

Slow cook: Cover and cook on Low for 8 hours (8 hours).

For a vegetarian option, omit the bacon and use olive oil for sautéing the vegetables. Consider adding a smoked paprika to enhance the smoky flavor.
If you like a thicker bean broth, mash some of the beans against the side of the slow cooker during the last hour of cooking.
If you don't have dark beer available, you can substitute with chicken or vegetable broth for a similar depth of flavor.
