Soak the Black-Eyed Peas: In a large bowl, cover the black-eyed peas with cool water, ensuring they are submerged by several inches. Let them soak for at least 8 hours, or preferably overnight. (8-12 hours)

Prepare the Ham Hock Broth: Place the ham hocks in a large stockpot with 6 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer until the meat is incredibly tender and easily pulls away from the bone. (90 minutes). Remove the ham hocks, reserving them for later. Refrigerate the ham stock overnight to allow the fat to solidify for easy skimming.

Combine Ingredients in Slow Cooker: Drain and rinse the soaked black-eyed peas thoroughly. Transfer them to your slow cooker. Nestle one of the cooked ham hocks amongst the peas. Add the chopped onion, crushed garlic, red pepper flakes, and a touch of sugar.

Add Broth and Cook: Skim off and discard the hardened fat from the chilled ham stock. Pour the defatted stock into the slow cooker, ensuring the peas are covered by about 1 1/2 inches of liquid. Add more water if needed.

Slow Cook to Perfection: Cook on Low heat for approximately 14 hours, or until the peas are incredibly tender and the flavors have melded beautifully. (14 hours)

Season and Serve: Once the peas are cooked, season with salt to taste. Serve hot, and enjoy!

For an even richer flavor, consider adding a bay leaf or a sprig of thyme to the slow cooker.
If you prefer a thicker consistency, you can mash some of the peas against the side of the slow cooker towards the end of the cooking time.
Adjust the amount of red pepper flakes to your liking for a spicier dish.
Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
