Season short ribs generously with salt and pepper on all sides.

Heat olive oil and sesame oil in a large pot or Dutch oven over medium-high heat. Sear short ribs in batches until deeply browned on all sides, approximately 5-8 minutes per batch. Transfer browned short ribs to a slow cooker.

In a separate bowl, whisk together soy sauce, vegetable broth, rice vinegar, brown sugar, minced garlic, grated ginger, and crushed red pepper flakes. Pour this flavorful sauce over the short ribs in the slow cooker.

Cover the slow cooker and cook on High for approximately 4 hours, or on Low for 7-8 hours, or until the short ribs are incredibly tender and easily shred with a fork. Remove the short ribs from the slow cooker and set aside, keeping them warm.

Pour the sauce from the slow cooker into a saucepan. Bring to a simmer over medium-low heat and cook until the sauce has reduced slightly and the flavors have intensified, about 5 minutes. Skim off any excess grease from the surface of the sauce.

In a small bowl, whisk together potato starch and cold water until smooth to create a slurry. Gradually whisk the slurry into the simmering sauce and cook until the sauce has thickened to your desired consistency, about 1-3 minutes.

Return the short ribs to the pot with the thickened sauce, ensuring they are well coated. Simmer for another minute to allow the flavors to meld. Serve the Asian short ribs garnished with thinly sliced green onions.

For richer flavor, marinate the short ribs in the sauce for at least 30 minutes (or up to overnight) before slow cooking.
If you prefer a thicker sauce, use 1.5 tablespoons of potato starch.
Serve these short ribs over rice, mashed potatoes, or noodles. They are also delicious in tacos or sliders.
