In a small bowl, whisk together the mayonnaise, lime juice, and chili powder until smooth and well combined. Set aside. (Prep time: 2 minutes)

Heat a large cast-iron skillet over medium-high heat until it's nice and hot. Add the corn kernels in an even layer and cook, undisturbed, for 5 minutes to allow for some char to develop.

Toss the corn with a spatula and continue cooking for another 3 minutes, or until the kernels are nicely browned and slightly blistered. Remove the skillet from the heat.

Pour the mayonnaise mixture over the warm corn and stir gently to coat all the kernels evenly. Stir in the fresh cilantro.

For an extra layer of flavor, consider adding a pinch of smoked paprika or a dash of hot sauce to the mayonnaise mixture.
If you don't have cotija cheese, queso fresco or even a sprinkle of Parmesan can be used as a substitute.
Freshly shucked corn is best, but frozen corn kernels can also be used. Be sure to thaw and pat them dry before cooking to prevent steaming.
Adjust the amount of chili powder to your preference for heat.
