Remove the meatloaf from the oven and pour the glaze evenly over the top, ensuring it coats the entire surface. (2 minutes)

Return the meatloaf to the oven and continue baking until it is no longer pink in the center and an instant-read thermometer inserted into the center registers at least 160 degrees F (70 degrees C), about 15 minutes longer.

For an extra layer of flavor, try adding a tablespoon of Dijon mustard to the meatloaf mixture.
If you don't have apricot preserves, peach or orange preserves can be used as a substitute.
Serve with a side of roasted vegetables or a fresh green salad for a complete and balanced meal.
Leftover meatloaf makes excellent sandwiches the next day. Try it on toasted sourdough with a smear of mayonnaise and a few slices of tomato.
