Follow The Directions

01

Step

Heat olive oil in a large skillet over medium-high heat. (2 minutes)

02

Step

Quickly sauté the shrimp until they turn pink but are not fully cooked. Remove from skillet and set aside. (3-5 minutes)

03

Step

Add the diced bell peppers, chopped onion, minced garlic, fennel seeds, and fresh thyme to the skillet. Cook, stirring occasionally, until the onion softens and becomes translucent. (8 minutes)

04

Step

Stir in the dry white wine, tomato paste, and canned diced tomatoes. Bring the mixture to a boil, then reduce heat to medium-low. (2 minutes)

05

Step

Simmer gently until the flavors meld and the sauce thickens slightly. (10 minutes)

06

Step

Return the shrimp to the skillet. Simmer until the shrimp are cooked through and opaque. (3 minutes)

07

Step

Stir in the chopped fresh basil. Season with salt and freshly ground black pepper to taste.

08

Step

Serve immediately over rice, pasta, or with crusty French bread for soaking up the delicious sauce.

For a deeper flavor, use high-quality extra virgin olive oil.
Fresh thyme and basil are highly recommended for the best flavor, but dried herbs can be substituted if necessary. Use 1 teaspoon of dried thyme and 1 tablespoon of dried basil.
A pinch of red pepper flakes can be added for a touch of heat.
Serve with a crisp white wine, such as Sauvignon Blanc or Pinot Grigio, to complement the flavors of the dish.
