Follow The Directions

01

Step

Preheat the Adventure: Preheat your oven to 350 degrees F (175 degrees C). Grease a 9x12-inch baking dish with cooking spray to prevent sticking. (5 minutes)

02

Step

Craft the Crêpes: In a large mixing bowl, whisk together the milk and eggs until light and frothy. (2 minutes). Gradually add the flour and salt, continuing to whisk until the batter is smooth and free of lumps. (2 minutes)

03

Step

Master the Crêpe Technique: Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter into the hot skillet, immediately tilting and swirling the pan to create a thin, even layer. (1 minute). Cook for approximately 4 minutes, or until the top surface appears set and the edges begin to lift. Carefully flip the crêpe and cook for an additional 2 minutes, until lightly golden brown. Repeat with the remaining batter, stacking the cooked crêpes on a plate.

04

Step

Prepare the Sumptuous Filling: In a separate bowl, whisk together the water, flour, and salt until well combined. Set aside. (2 minutes)

05

Step

Sauté the Seafood: In a large non-stick skillet, melt the butter over low heat. Add the minced garlic and cook, stirring frequently, until fragrant and golden brown, being careful not to burn. (7 minutes). Add the shrimp and lobster meat to the skillet, stirring to combine. Cover and cook until the shrimp turns pink and opaque, about 5 minutes. Stir in the lemon juice and cayenne pepper for a touch of brightness and heat. Cover and cook for an additional 5 minutes to allow the flavors to meld.

06

Step

Bind the Flavors: Gradually whisk in the water-flour mixture to the shrimp and lobster mixture, stirring constantly to prevent lumps. Sprinkle the Parmesan cheese over the top and cook over medium heat, stirring until the sauce thickens to your desired consistency, about 1 minute.

07

Step

Assemble the Crêpes: Spoon a generous amount of the shrimp filling onto each crêpe. Gently roll the crêpe around the filling and place it seam-side down in the prepared baking dish. (15 minutes)

08

Step

Create the Velvety Sauce: In a small saucepan, whisk together the milk, mayonnaise, and flour until smooth. Cook over medium heat, stirring constantly, until the sauce comes to a simmer and thickens slightly, about 2 to 3 minutes.

09

Step

Bake to Golden Perfection: Drizzle the creamy sauce evenly over the filled crêpes. Bake in the preheated oven for 25 to 30 minutes, or until the crêpes are heated through and the sauce is bubbly and lightly golden brown.

For an extra layer of flavor, consider adding a splash of dry sherry or white wine to the shrimp mixture while cooking.
If you prefer a richer sauce, substitute heavy cream for some of the milk.
These crêpes can be assembled ahead of time and refrigerated for up to 24 hours before baking. Add an extra 10-15 minutes to the baking time if baking from cold.
