In a resealable plastic bag, combine flour, salt, and pepper. Shake to mix. Add chicken pieces, a few at a time, and shake to coat thoroughly. Place coated chicken in the prepared baking dish. (15 minutes)

Melt butter in a skillet over medium heat. Cook onion until translucent, about 5 minutes. Sprinkle cooked onion over the chicken in the baking dish. (10 minutes)

In a bowl, whisk together tomato sauce, water, chutney, sugar, vinegar, Worcestershire sauce, paprika, ground mustard, and hot pepper sauce until the sugar is dissolved. Pour this sauce evenly over the chicken and onions. (5 minutes)

Bake in the preheated oven until the sauce is bubbling, the chicken is no longer pink inside, and the juices run clear when pierced with a fork, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). (60 minutes)

For a richer flavor, use bone-in, skin-on chicken thighs. Adjust baking time accordingly.
Feel free to experiment with different types of chutney to customize the flavor profile. Mango or apple chutney work particularly well.
If the sauce becomes too thick during baking, add a tablespoon or two of water to thin it out.
Serve with rice, mashed potatoes, or crusty bread to soak up the delicious sauce.
