For a milder flavor, remove the seeds and membranes from the poblano peppers more thoroughly. If you like your peppers with some heat, leave some of the seeds intact. To save time, you can prepare the sausage filling ahead of time. Store it in the refrigerator for up to 24 hours. Be sure to bring the filling to room temperature before stuffing the peppers. Feel free to experiment with different types of cheese! Cheddar, Monterey Jack, or even a sprinkle of Parmesan would be delicious. Add some diced onion and garlic to the sausage while browning for even more flavor.
