In a colander, combine the shredded cabbage and salt. Allow to drain for 1 hour to remove excess moisture.

After draining, squeeze any remaining moisture from the cabbage. Transfer the cabbage to a large bowl and mix in the shredded carrots until well combined. Divide the mixture evenly between freezer-safe pint containers. (Prep time: 15 minutes)

In a medium saucepan, whisk together the sugar, apple cider vinegar, water, celery seed, and dry mustard. Heat over medium-high heat and bring to a boil, stirring constantly, for 1 minute. Remove from heat and allow to cool completely. (Cook time: 5 minutes, Cool time: 30 minutes)

Once the vinegar mixture has cooled, pour it evenly over the cabbage mixture in each container. Seal the containers tightly and freeze. Thaw completely in the refrigerator before serving. (Freezing time: Up to 2 months)

For added flavor and texture, consider adding finely chopped onions and bell peppers to the cabbage and carrot mixture before freezing.
Be sure to use freezer-safe containers to prevent freezer burn and maintain the quality of the slaw.
Thawing in the refrigerator is recommended for the best texture. Avoid thawing at room temperature.
The slaw will maintain the best quality if frozen for no more than two months.
