Follow The Directions

01

Step

Combine the garlic scapes, Parmesan cheese, Asiago cheese, lemon juice, and pine nuts in the bowl of a food processor. (2 minutes)

02

Step

With the food processor running, slowly drizzle in the extra-virgin olive oil until a smooth, vibrant green pesto forms. (3 minutes)

03

Step

Season generously with salt and freshly ground black pepper to taste. (1 minute)

For a richer flavor, toast the pine nuts lightly in a dry skillet before adding them to the food processor.
Adjust the amount of olive oil to achieve your desired consistency. Some prefer a thicker pesto, while others prefer a more fluid sauce.
This pesto freezes beautifully. Portion it into ice cube trays for easy use throughout the year.
If garlic scapes are unavailable, substitute with 2-3 cloves of garlic, but the flavor will be more intense.
