Preheat your oven to 350 degrees F (175 degrees C). Lightly coat a rimmed baking sheet with olive oil cooking spray. (5 minutes)

If the baby red potatoes are larger than golf balls, cut them in half. On the prepared baking sheet, arrange the potatoes and green beans in a single layer, ensuring they are not overcrowded. Lightly spray the vegetables with olive oil cooking spray. (5 minutes)

Evenly sprinkle the salt, garlic powder, black pepper, and dried parsley over the potatoes and green beans. (2 minutes)

Bake in the preheated oven until the potatoes are tender and easily pierced with a fork, approximately 25 to 30 minutes. For enhanced browning, you can broil for the last 2-3 minutes, watching carefully to prevent burning. (30 minutes)

For a richer flavor, toss the potatoes and green beans with 1-2 tablespoons of olive oil instead of using cooking spray.
Feel free to experiment with other herbs and spices. Rosemary, thyme, or red pepper flakes would all be delicious additions.
To ensure even cooking, make sure the vegetables are arranged in a single layer on the baking sheet. If necessary, use two baking sheets.
These roasted vegetables are best served immediately but can be stored in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
