For the best flavor, roast your own garlic. Simply cut off the top of a head of garlic, drizzle with olive oil, wrap in foil, and roast at 400°F (200°C) for 45-60 minutes, or until soft and caramelized. Adjust the amount of roasted garlic to your preference. Start with 2 tablespoons and add more if desired. Fresh dill can be used in addition to, or instead of, mint for a different flavor profile. Store leftover tzatziki in an airtight container in the refrigerator for up to 3 days.
