Peel the bananas, cut into 2-3 chunks, and freeze until completely solid (at least 2 hours).

Roast the bananas in the preheated oven until they are softened and lightly browned, approximately 20 minutes. Remove from the oven and mash the roasted bananas thoroughly in a bowl. Cover and chill in the refrigerator until cold (at least 1 hour).

In a separate bowl, whisk together the egg, granulated sugar, brown sugar, and bourbon whiskey until the mixture is smooth and well combined. (5 minutes)

Pour the heavy cream into a heavy-bottomed saucepan. Heat over medium-low heat until it just begins to simmer, watching carefully to prevent boiling. (10 minutes)

Temper the egg mixture by gradually whisking about 1 cup of the hot cream into the egg mixture, adding it one tablespoon at a time to prevent curdling. Once tempered, pour the warmed egg mixture back into the saucepan with the remaining cream. (5 minutes)

Cook the custard over medium-low heat, constantly whisking, until the mixture thickens enough to coat the back of a spoon and reaches a temperature of 170-180°F (77-82°C). Stir in the chilled mashed bananas. (10-15 minutes)

Transfer the ice cream base to a bowl, cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Chill in the refrigerator for at least 4 hours, or preferably overnight, to allow the flavors to meld. (4 hours - overnight)

Pour the chilled ice cream base into your ice cream maker and churn according to the manufacturer's instructions. (20-30 minutes)

Once churned, the ice cream will be soft. Transfer it to a lidded container and freeze until firm, at least 1 hour, before serving.

For the best flavor, use very ripe bananas with plenty of brown spots.
Don't skip the roasting step! It deepens the banana flavor and adds a subtle caramel note.
If you don't have bourbon, you can substitute another type of whiskey, or even dark rum.
Chilling the ice cream base thoroughly is crucial for a smooth, creamy texture.
