Follow The Directions

01

Step
5 mins

Preheat the oven to 400 degrees F (200 degrees C). (5 minutes)

02

Step
5 mins

Heat olive oil in a 9-inch cast iron skillet over medium heat. Add chorizo; cook, stirring to crumble, until browned and cooked through. Transfer to paper towels to drain excess fat. Drain any excess fat from the skillet. (5 minutes)

03

Step
8 mins

Without cleaning the skillet, add bell peppers and onion. Cook over medium-high heat, stirring often, until browned and softened. Remove skillet from heat and stir in tequila. Continue cooking vegetables, stirring often, until the tequila is mostly absorbed and vegetables are fragrant. Using a slotted spoon, transfer vegetables to a bowl. (8 minutes)

04

Step
10 mins

In a bowl, gently combine Monterey Jack and Cheddar cheeses. Spread 1/3 of the cheese mixture evenly in the skillet. Add 1/3 of the cooked vegetables, then 1/3 of the crumbled chorizo. Repeat these layers two more times, finishing with the remaining chorizo. Sprinkle the top evenly with chili powder. (10 minutes)

05

Step
8 mins

Bake in the preheated oven until the cheeses are completely melted, bubbly, and lightly golden brown. (8 minutes)

06

Step

Remove from the oven and immediately top with diced plum tomatoes, fresh cilantro, and a sprinkle of kosher salt. Serve immediately with tortilla chips, warm tortillas, or your favorite crudités.

For a smoky depth of flavor, consider using smoked paprika instead of chili powder.
If you don't have tequila on hand, a splash of beer or chicken broth can be used as a substitute, though the flavor profile will change slightly.
Feel free to customize the vegetables! Roasted poblano peppers, mushrooms, or corn would all be delicious additions.
To keep the Queso Fundido warm while serving, place the cast iron skillet on a wooden trivet or hot pad.
