Follow The Directions

01

Step

In a medium saucepan, combine the red bell peppers and heavy cream. (2 minutes)

02

Step

Bring the mixture to a gentle boil over medium heat, then reduce the heat to low. (5 minutes)

03

Step

Simmer, stirring occasionally to prevent sticking, until the cream has reduced by half and the peppers are very tender. This should take approximately 30 minutes.

04

Step

Remove the saucepan from the heat. Stir in the fresh lemon juice, smoked paprika, salt, white pepper, and cayenne pepper. (2 minutes)

05

Step

Allow the sauce to cool slightly. (5 minutes)

06

Step

Working in batches, carefully transfer the sauce to a blender. Secure the lid and blend until completely smooth and creamy. (3 minutes per batch)

07

Step

Return the blended sauce to the saucepan and gently reheat over low heat, if needed. (5 minutes)

08

Step

Serve immediately, or store in an airtight container in the refrigerator for up to 3 days.

For an even smoother sauce, strain it through a fine-mesh sieve after blending.
Adjust the amount of cayenne pepper to your preferred level of spiciness.
A touch of roasted garlic elevates the depth of this sauce even further. Add 2-3 cloves of roasted garlic along with the other ingredients in step 1.
For a vegan variation, substitute the heavy cream with cashew cream or full-fat coconut milk. The flavor profile will be slightly different, but still delicious.

I found the sauce a little too thick, so I added a bit of pasta water to thin it out. Worked perfectly!

I roasted the peppers first, as suggested, and it made a big difference. So delicious!
