Make cuts across the potato, about 1/4-inch apart, slicing down until your knife hits the spoons. This prevents you from cutting all the way through. Repeat with the remaining potatoes. Transfer the fanned potatoes to a heat-proof dish, such as a cast-iron skillet or disposable aluminum pan, and add the coarsely chopped onion. (10 minutes)

Generously spoon the prepared oil-ranch mixture evenly over the fanned potatoes and chopped onion, ensuring every nook and cranny is coated. Cover the dish tightly with aluminum foil to trap the steam and promote even cooking. (3 minutes)

Carefully place the covered dish onto the preheated grill grate. Cook for approximately 30 minutes, flipping the dish (or rotating the potatoes individually if not using a dish) every 10 minutes to ensure even cooking and prevent burning. The potatoes are done when they are easily pierced with a fork and have a beautiful golden-brown color. (30 minutes)

For a richer flavor, try using a high-quality smoked olive oil.
Feel free to experiment with different types of potatoes, such as Yukon Gold or red potatoes.
Add a sprinkle of fresh herbs like parsley or chives after grilling for an extra burst of freshness.
If you don't have a grill, these potatoes can also be roasted in the oven at 400°F (200°C) for about 40 minutes.
