While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and chopped sweet onion, cook until softened and translucent, about 5 minutes. Add sliced crimini mushrooms, diced sweet potato, cayenne pepper, salt, and pepper. Cover the skillet, reduce heat to medium-low, and cook, stirring occasionally, until sweet potato is tender and easily pierced with a fork, about 20 minutes. If the vegetables start to stick, add a tablespoon of water at a time.
