For an extra layer of flavor, toast the quinoa in a dry pan for a few minutes before cooking. Feel free to substitute any of your favorite vegetables. Roasted vegetables would also be a delicious addition. The salad can be made ahead of time and stored in the refrigerator for up to 3 days. The flavors will meld together beautifully.
