Follow The Directions

01

Step

In a large bowl, cream together the sugar and softened butter using an electric mixer until light and fluffy. (Approximately 3-5 minutes)

02

Step

Beat in the egg until well combined, followed by the pumpkin puree, vanilla extract, cinnamon, salt, and baking powder. (Approximately 1-2 minutes)

03

Step

Gradually add the flour, mixing until just combined. Be careful not to overmix. (Approximately 1-2 minutes)

04

Step

Wrap the dough in plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and the dough to firm up. (2+ hours)

05

Step

Preheat your oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.

06

Step

On a lightly floured surface, roll out the chilled dough to about 1/4 inch thickness. Use cookie cutters to cut out your desired shapes.

07

Step

Carefully transfer the cut-out cookies to the prepared baking sheet, leaving a little space between each cookie.

08

Step

Bake in the preheated oven for 6 to 8 minutes, or until the edges are lightly golden brown. (6-8 minutes)

09

Step

Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

For a richer flavor, consider using brown butter instead of softened butter.
Feel free to experiment with other spices like nutmeg, ginger, or cloves to customize the flavor profile.
If you don't have cookie cutters, you can simply slice the dough into squares or rectangles.
Store the baked cookies in an airtight container at room temperature for up to 3 days.
