Follow The Directions

01

Step

In a blender, combine cilantro, olive oil, lime juice, garlic, red pepper flakes, and salt. Blend until smooth. Pour the marinade into a large resealable plastic bag. (5 minutes)

02

Step

Add pork tenderloin to the bag, ensuring it's fully coated with the marinade. Squeeze out excess air and seal the bag. Marinate in the refrigerator for at least 8 hours, or preferably overnight. (8 hours - overnight)

03

Step

In the pressure cooker, combine chicken broth and lemon juice. Remove the tenderloin from the marinade, shaking off the excess, and reserve the remaining marinade. (2 minutes)

04

Step

Place the tenderloin in the broth mixture within the pressure cooker. Pour the reserved marinade over the tenderloin, ensuring it's nicely coated. (1 minute)

05

Step

Seal and lock the pressure cooker according to the manufacturer's instructions. Cook over high heat until the pressure indicator sounds. Reduce heat to medium and cook for 25 minutes. (30 minutes)

06

Step

Remove the pressure cooker from heat and let it stand for 5 minutes to naturally release pressure. Then, carefully place the pressure cooker under cold running water to fully release any remaining pressure before unsealing the lid. (10 minutes)

07

Step

Carefully remove the tenderloin and slice it into medallions. Serve immediately and enjoy the tender, flavorful results.

For an extra layer of flavor, consider searing the pork tenderloin in a hot pan before placing it in the pressure cooker. This will add a beautiful crust and enhance the overall taste.
Adjust the amount of red pepper flakes to your preference. For a milder flavor, use less; for a spicier kick, use more.
If you don't have a pressure cooker, you can adapt this recipe for a slow cooker. Cook on low for 4-6 hours, or until the pork is easily shredded with a fork.
