For a smoother soup, you can use an immersion blender to partially blend the soup after the potatoes are cooked, before adding the cream. Adjust the amount of salt and pepper to your preference. Remember that bouillon cubes already contain salt. For a vegetarian version, substitute vegetable bouillon cubes for the chicken bouillon cubes. A dash of hot sauce can add a pleasant kick to the soup.
