Follow The Directions

Step

In a large pot, combine the cubed potatoes, chicken bouillon cubes, water, salt, pepper, garlic powder, and nutmeg. (2 minutes)

Bring the mixture to a boil over high heat, then reduce heat to medium and simmer for approximately 15 minutes, or until the potatoes are tender and easily pierced with a fork. (15 minutes)

Once the potatoes are cooked, stir in the heavy whipping cream and sliced green onions. (2 minutes)

Continue to heat the soup until it just begins to bubble gently, being careful not to boil. This should take about 5 minutes. (5 minutes)

Remove the pot from the heat and ladle the soup into individual bowls.

Garnish with crispy bacon bits, if desired, before serving.

For a smoother soup, you can use an immersion blender to partially blend the soup after the potatoes are cooked, before adding the cream.
Adjust the amount of salt and pepper to your preference. Remember that bouillon cubes already contain salt.
For a vegetarian version, substitute vegetable bouillon cubes for the chicken bouillon cubes.
A dash of hot sauce can add a pleasant kick to the soup.
