Follow The Directions

01

Step

Preheat an outdoor grill for medium-high heat and lightly oil the grate. (5 minutes)

02

Step

In a large bowl, gently combine the ground bison, cumin, oregano, thyme, and chipotle pepper. (2 minutes)

03

Step

Add the finely chopped portobello mushrooms, shredded Cheddar cheese, and finely chopped onion to the bison mixture. Mix until just combined, being careful not to overwork the meat. (3 minutes)

04

Step

Season the mixture generously with salt and freshly ground black pepper to taste. (1 minute)

05

Step

Divide the mixture evenly into 4 portions and gently shape each portion into a patty, about 3/4 inch thick. (4 minutes)

06

Step

Place the patties on the preheated grill and reduce the heat slightly. Grill for 3 to 4 minutes, or until nicely browned on the bottom. (4 minutes)

07

Step

Flip the patties carefully and continue to grill for another 3 to 4 minutes, or until the other side is browned and the internal temperature reaches 160°F (71°C) for medium doneness. (4 minutes)

08

Step

Remove the patties from the grill and let them rest for a couple of minutes before serving on toasted whole wheat buns. (2 minutes)

For a deeper smoky flavor, consider using smoked Cheddar cheese.
If you don't have chipotle pepper on hand, a pinch of smoked paprika can be a good substitute.
To prevent the patties from sticking to the grill, make sure the grate is clean and well-oiled.
For a juicier burger, avoid overcooking the patties. Use a meat thermometer to ensure they reach the desired internal temperature.
