In a large skillet, cook bacon over medium-high heat until crispy and browned, approximately 10 minutes. Transfer bacon to paper towels to drain, reserving the drippings in the skillet.

Pat the pork tenderloin dry with paper towels. Season both sides with salt, pepper, and 1/4 teaspoon of ground ginger.

Increase the heat to medium-high and sear the tenderloin in the bacon drippings until browned on all sides, about 5-7 minutes. Remove from skillet and set aside to keep warm.

Reduce heat to medium. Add sliced onions to the skillet and sauté until softened and slightly colored, around 3-5 minutes. Stir in minced garlic and cook until fragrant, about 1 minute.

Add sliced peaches, chicken broth, orange juice concentrate, and the remaining ground ginger to the skillet. Bring to a boil, then return the tenderloin to the skillet. Pile peaches on top of the meat. Cover, reduce heat to simmer, and cook until the pork is slightly pink in the center, approximately 20-25 minutes. An instant-read thermometer should read at least 145°F (63°C).

Transfer the pork and peaches to a serving platter, arranging them artfully.

In a small bowl, whisk together fish sauce, water, and cornstarch until smooth. Increase the heat under the skillet to medium and bring the sauce to a boil. Add the cornstarch mixture, stirring constantly until the sauce thickens and becomes bubbly, about 5 minutes.

Pour the sauce over the pork and peaches. Crumble the cooked bacon and sprinkle over the peaches. Garnish with fresh parsley, if desired, and serve immediately.

For a vegetarian option, substitute the pork tenderloin with firm tofu or large portobello mushrooms. Adjust cooking times accordingly.
If fresh peaches are not in season, you can use frozen peach slices. Thaw them slightly before adding to the skillet.
For a richer sauce, add a tablespoon of butter during the last minute of cooking. Consider adding a splash of dry sherry for extra flavor.
