Follow The Directions

01

Step

In a plastic bag, combine the flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add the chicken pieces and toss to coat evenly. (Prep time: 5 minutes)

02

Step

Heat the corn oil in a Dutch oven over medium heat. Shake off the excess flour from the chicken and place in the hot oil. Brown on all sides, turning occasionally. (Cook time: 15 minutes)

03

Step

Pour in the water, cover, and reduce heat to medium-low. Simmer for 30 minutes. (Cook time: 30 minutes)

04

Step

Stir in the chopped onion and green bell pepper. Continue cooking until the chicken is no longer pink at the bone and the onion is tender, about 10 minutes. (Cook time: 10 minutes)

05

Step

Pour 2 tablespoons of the reserved peach juice into a small bowl and set aside. Pour the remaining peach juice into the Dutch oven along with the soy sauce and vinegar; bring to a boil over medium-high heat.

06

Step

Dissolve the cornstarch in the reserved peach juice. Stir into the boiling sauce. Cook and stir until the sauce thickens and is no longer cloudy, about 1 minute. (Cook time: 1 minute)

07

Step

Stir in the peach halves and chopped tomatoes. Cook and stir until the peaches are heated through and the tomatoes are beginning to soften, about 5 minutes. (Cook time: 5 minutes)

08

Step

Season to taste with salt and pepper before serving. Enjoy!

For a richer flavor, marinate the chicken in a mixture of soy sauce, ginger, and garlic for at least 30 minutes before cooking.
If you prefer a spicier dish, add a pinch of red pepper flakes to the sauce.
Serve over white rice, brown rice, or quinoa.

The sauce was a little too sweet for my taste, so I added a squeeze of lime juice to balance it out.
