For a spicier salsa, leave the seeds in one of the green chile peppers or add a pinch of cayenne pepper. If fresh pineapple is unavailable, canned pineapple tidbits or chunks can be used. Be sure to drain them well before chopping. Red onion provides a more pungent flavor than white or yellow onion. Adjust the amount to your preference. This salsa can be stored in an airtight container in the refrigerator for up to 3 days. The flavors will continue to develop over time.
