For an extra kick, add a finely diced jalapeño pepper (seeds removed!). If you don't have fresh cilantro, you can use 2 tablespoons of dried cilantro, but fresh is always best. This salsa is best served fresh, but it can be stored in an airtight container in the refrigerator for up to 2 days. Serve with your favorite tortilla chips, as a topping for grilled chicken or fish, or as a flavorful addition to tacos and burritos.
