For extra flavor, marinate the pork chops in a mixture of soy sauce, pineapple juice, and ginger for at least 30 minutes before cooking. If you prefer a thicker sauce, whisk 1 additional teaspoon of cornstarch with 1 tablespoon of cold water and add it to the sauce while it's simmering. Fresh pineapple can be used in place of canned pineapple. Be sure to peel, core, and chop the pineapple into bite-sized chunks. Serve with steamed white rice, brown rice, or quinoa for a complete meal. Steamed broccoli or green beans are excellent vegetable sides.
