Preheat oven to 350 degrees F (175 degrees C). Grease and line a 9x13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Grease the parchment paper. (5 minutes)

In a large bowl, combine the flour, granulated sugar, crushed pineapple (with juice), baking soda, eggs, 1 cup of shredded coconut, and 1 cup of chopped walnuts. Mix until just combined. Be careful not to overmix. (5 minutes)

Bake in the preheated oven for 40 to 45 minutes, or until a wooden skewer inserted into the center comes out clean. (40-45 minutes)

Let the cake cool in the pan for 15 minutes before using the parchment paper overhang to carefully lift the cake out of the pan and onto a wire rack to cool completely. (15 minutes)

While the cake is cooling, prepare the frosting: In a large bowl, beat the softened butter and cream cheese together until smooth and creamy. (3 minutes)

Gradually add the confectioners' sugar and vanilla extract, beating until the frosting is light and fluffy. (2 minutes)

Once the cake is completely cool, frost the top with the cream cheese frosting. (5 minutes)

Sprinkle the top of the frosted cake with the remaining 1/2 cup of chopped walnuts and 1/2 cup of shredded coconut (or more, to taste). (2 minutes)

For an even more intense pineapple flavor, try using pineapple extract in the frosting.
If you don't have walnuts on hand, pecans or macadamia nuts would also be delicious.
