Follow The Directions

01

Step

Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans. (Prep time: 15 minutes)

02

Step

In a medium bowl, whisk together cake flour, baking powder, and salt until well combined. (5 minutes)

03

Step

In a large bowl, cream together shortening, white sugar, eggs, and vanilla extract using an electric mixer until light and fluffy. (7 minutes)

04

Step

Gradually add the flour mixture to the creamed mixture alternately with the milk, beginning and ending with the flour mixture. Mix lightly after each addition until just combined. Be careful not to overmix. (10 minutes)

05

Step

Divide batter evenly between the prepared cake pans and spread to the edges. (3 minutes)

06

Step

Bake for 35 to 40 minutes, or until a wooden skewer inserted into the center comes out clean. (Bake time: 35-40 minutes)

07

Step

Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely. (Cool time: 60 minutes)

08

Step

While the cakes are cooling, prepare the frosting: In a large bowl, cream together the softened butter until smooth. Gradually beat in the sifted confectioners' sugar, then add the light cream and lemon juice. Beat until the frosting is light and creamy. (10 minutes)

09

Step

Once the cakes are completely cooled, level the tops if necessary. Place one cake layer on a serving plate and spread with a generous layer of frosting. Top with the second cake layer and frost the entire cake. (10 minutes)

10

Step

Decorate the top of the cake with a ring of well-drained mandarin orange segments around the outer edge. Fill the center with the well-drained crushed pineapple and garnish with a few additional orange segments. (10 minutes)

For a moister cake, consider brushing the cooled cake layers with a simple syrup made from equal parts sugar and water before frosting.
Ensure the butter and shortening are at room temperature for easier creaming.
To prevent the cake from sticking, line the bottom of the cake pans with parchment paper rounds.
If you don't have cake flour, you can make your own by removing 2 tablespoons of all-purpose flour per cup and replacing it with cornstarch.
Make sure to drain the mandarin oranges and crushed pineapple really well to prevent a soggy cake.
