Place the ground pork in a separate, larger bowl. Sprinkle the spice mixture evenly over the pork. Using your hands or a spoon, gently mix until the spices are thoroughly incorporated. (5 minutes)

Cover the bowl with plastic wrap and refrigerate for at least 8 hours, or preferably overnight, to allow the flavors to meld. (8+ hours)

Preheat your oven to 350°F (175°C). Lightly butter eight individual 8-ounce ramekins to prevent sticking. (5 minutes)

Divide the sausage mixture into 8 equal portions. Gently press each portion into a prepared ramekin, creating a well in the center to hold the egg. (10 minutes)

Carefully crack one egg into the center of each sausage-lined ramekin. (5 minutes)

Bake in the preheated oven for 30 to 40 minutes, or until the sausage is fully cooked and the egg is set to your liking. For a runny yolk, check around 30 minutes; for a firmer yolk, bake closer to 40 minutes. (30-40 minutes)

Remove from the oven and let cool slightly before serving. These can be enjoyed immediately or stored in the refrigerator for later. (5 minutes)

For a spicier sausage, add a pinch of red pepper flakes to the spice mixture.
You can substitute ground turkey or chicken for the pork.
Feel free to add chopped vegetables like bell peppers, onions, or spinach to the sausage mixture for added nutrients and flavor.
These paleo pouches reheat well in the microwave or oven. Reheat until warmed through.
