Combine the filling: In a mixing bowl, thoroughly combine the ground chicken, cooked rice, chopped onion, minced garlic, ground black pepper, salt, and the reserved diced pepper. Ensure all ingredients are evenly distributed. (10 minutes)

Stuff and sauce: Generously pack the chicken mixture into each of the prepared green peppers. Once stuffed, evenly coat the tops of the peppers with the tomato sauce. (5 minutes)

Bake: Place the baking pan in the preheated oven and bake for 45 minutes, or until the peppers are slightly softened.

Cheese and finish: Remove the pan from the oven and sprinkle the mozzarella cheese evenly over the tops of the stuffed peppers. Return to the oven and continue baking until the filling is fully cooked through, and the cheese is melted, golden, and bubbly, approximately 15 minutes longer. (60 minutes)

For an extra layer of flavor, consider browning the ground chicken in a skillet with the onions and garlic before mixing it with the rice and other ingredients.
Feel free to experiment with different types of rice, such as brown rice or wild rice, for a nuttier flavor and added texture.
Add a pinch of red pepper flakes to the chicken mixture for a subtle kick of heat.
