Follow The Directions

01

Step

Warm the olive oil in a medium-sized skillet over medium heat. (1 minute)

02

Step

Add the pancetta and onion to the skillet. Cook, stirring occasionally, until the pancetta is lightly browned and the onion is softened and translucent. (5-7 minutes)

03

Step

Pour in the white wine, scraping up any browned bits from the bottom of the pan. Allow the wine to reduce slightly. (2 minutes)

04

Step

Stir in the peas and thyme. Season with salt and pepper to taste.

05

Step

Bring the mixture to a gentle simmer, then reduce the heat to low. Cook until the peas are tender and the liquid has reduced to a light glaze. (3-5 minutes)

06

Step

Serve immediately and enjoy!

For an extra layer of flavor, consider adding a small knob of butter at the very end, stirring until melted and incorporated.
Fresh peas are preferable when in season, but frozen peas work perfectly well and are a convenient alternative.
If you don't have fresh thyme, you can substitute 1 teaspoon of dried thyme. Add it along with the wine to allow it to rehydrate.
A sprinkle of grated Parmesan cheese adds a delightful salty and umami finish.

I would recommend dicing the pancetta very finely to allow it to crisp up nicely.
