Heat olive oil in a large saucepan over medium heat. Season chicken with salt and pepper. Add chicken to the hot oil and cook, stirring occasionally, until browned and cooked through, about 7-10 minutes. Remove chicken with a slotted spoon and set aside, leaving the flavorful drippings in the pan.

Pour chicken broth into the saucepan. Bring to a simmer, scraping up any browned bits from the bottom of the pan. Continue simmering until the broth reduces slightly, about 5-7 minutes. Return the cooked chicken to the saucepan. Stir in the pesto until the chicken is well coated. Remove from heat.

Meanwhile, bring a large pot of salted water to a rolling boil. Add gnocchi and cook until they float to the surface, about 2-3 minutes. Remove gnocchi with a slotted spoon and transfer them to a large bowl, reserving some of the pasta water.

Place the saucepan with the chicken and pesto back over low heat. Gently warm the mixture, stirring occasionally, about 3-5 minutes. Add a splash of the reserved pasta water if needed to loosen the sauce. Pour the chicken and pesto mixture over the gnocchi. Add mozzarella balls and gently toss until everything is evenly coated and the mozzarella is slightly softened.

For an extra layer of flavor, consider adding sautéed mushrooms or sun-dried tomatoes to the chicken mixture.
If your pesto lacks garlic, add a clove of minced garlic to the olive oil at the beginning of the recipe.
Freshly grated Parmesan cheese makes a wonderful topping for this dish.
