For a variation, try using different flavors of jelly such as strawberry or raspberry. Crunchy peanut butter can be substituted for creamy, if preferred. For easier cutting, chill the bars in the refrigerator for 30 minutes after cooling.
Relive your childhood with these delightful PB&J Crunch Bars. A symphony of textures and flavors, these bars combine a buttery, crumbly oat base with a creamy peanut butter and sweet grape jelly filling, topped with a crunchy oat crumble. Perfect for a nostalgic treat or a crowd-pleasing dessert!
Preheat oven to 375°F (190°C). (5 minutes)
In a large bowl, combine the oats, flour, granulated sugar, brown sugar, graham cracker crumbs, and cinnamon. (5 minutes)
Add the sliced cold butter and cut it into the dry ingredients using a pastry blender or your fingertips until the mixture resembles coarse crumbs. (10 minutes)
Press half of the oat mixture firmly into the bottom of an ungreased 9x13 inch baking dish. (5 minutes)
Spread the warmed peanut butter evenly over the pressed oat mixture. (3 minutes)
Gently stir the grape jelly to loosen it, then dollop spoonfuls over the peanut butter layer. Swirl gently with a knife or skewer to create a marbled effect. (5 minutes)
Sprinkle the remaining oat mixture evenly over the peanut butter and jelly layer. Gently pat down to help it adhere. (2 minutes)
Bake in the preheated oven for 25-35 minutes, or until the top is golden brown and the filling is bubbly. (30 minutes)
Let the bars cool completely in the baking dish before cutting into squares. This allows the filling to set properly. (60 minutes)
For a variation, try using different flavors of jelly such as strawberry or raspberry. Crunchy peanut butter can be substituted for creamy, if preferred. For easier cutting, chill the bars in the refrigerator for 30 minutes after cooling.
