Stir in tomato sauce, garlic, and chicken bouillon. Add a little water if the mixture becomes too dry. Simmer for 5 minutes to allow the flavors to meld. (Cook time: 5 minutes)

Spread half of the mashed plantains evenly into the prepared baking dish. Pour the meat mixture over the plantain layer, then sprinkle with shredded Cheddar cheese. Top with the remaining mashed plantains, spreading to cover the cheese. (Assembly time: 10 minutes)
