Step

Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until al dente, about 12 minutes.

Roast the poblano peppers directly over a gas flame, turning occasionally with tongs, until the skin is completely charred, about 7 minutes. Transfer the peppers to a plastic bag or a bowl covered with plastic wrap and let them steam for about 8 minutes. This makes peeling easier. Remove the peppers from the bag, peel off the charred skin, and discard the seeds and stems.

In a blender, combine the roasted and peeled poblano peppers, Mexican sour cream, water, chopped cilantro, vegetable bouillon cubes, garlic cloves, and black pepper. Blend until smooth and creamy.

Pour the sauce into a large saucepan and heat over low heat until it simmers gently. Drain the cooked spaghetti and add it to the sauce. Toss to coat well and simmer for 2 to 3 minutes to allow the flavors to meld.

Serve immediately, garnished with grated Parmesan cheese and fresh cilantro leaves.

For a spicier kick, leave some of the seeds in one of the poblano peppers.
If you don't have a gas stove, you can roast the poblano peppers under the broiler. Just be sure to turn them frequently to char all sides.
Regular sour cream can be substituted for Mexican crema, but the flavor will be slightly different.
This pasta is great served with a side of grilled corn or a simple salad.
